Continuing the proud farming tradition of the Rondout Valley
Set amidst the iconic Shawangunk Mountains, Hilltop Farm is Ulster County’s only producer of purebred Wagyu beef. Proud farmers Barton and Becky Collins Brooks honor their land by practicing sustainable, no-till techniques that produce only the highest quality animals. These practices and Hilltop Farm’s healthy soil, cool old-growth forest and green pastures make their Catskill Wagyu beef a prized farmstead product. They maintain a closed herd, and their cows are pasture-raised and grass fed.

Barton and Becky’s small herd of dairy cows provide the creamy and nutritious raw A2 milk that will soon be sold directly from their new micro-dairy honoring his grandfather, Wilson Sheeley.
Farm pickup and tours are available by appointment only. Beef shares are sold as available, Wagyu by the individual cut.
